Turkey Satay with Peanut Sauce

Ingredients
Turkey and Marinade
  • 1 1/2lbs turkey breast tenders, roast or filetscut into strips
  • 1/2 – 1cup plain yogurt or buttermilk
  • 2 garlic clovescrushed
  • 1tbsp gingergrated
  • 2tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp curry paste or powder
Peanut Sauce
  • 1/3 cup peanut butter
  • 2tbsp soy sauce
  • 2 tbsp honey
  • 2tbsp rice vinegar or lime juice
  • 1 garlic clovecrushed
  • 1-2tsp gingergrated
  • 1tsp sesame oil(optional)
  • 1/4-1/2tsp curry paste or powder(optional)
Instructions
  1. Cut the turkey lengthwise into strips and place in a bowl or zip-lock bag. Combine all the marinade ingredients and pour over the turkey; toss well and refrigerate for at least an hour or overnight.
  2. When you’re ready to cook them, soak some bamboo skewers in water for about 10 minutes to prevent them from burning. Thread the turkey strips onto the skewers and grill or broil for a few minutes on each side, until just cooked through. Serve warm, at room temperature or cold with peanut sauce for dipping.
  3. To make the peanut sauce, combine all the ingredients in a blender until smooth.
